LOUISIANA MEATLOAF
Combines all the ingredients of your traditional meatloaf with a dash of spicy cajun flavor.
Prep time: 20 minutes
Cooking time: 75 minutes
Serves: 8
INGREDIENTS:
1 cup Bread Crumbs
1/2 cup Red Wine
500gm Beef (Ground)
1/2 pound Ground Lean Pork
3 tablespoon Chopped Onions
3 tablespoon Minced Parsley
3 tablespoon Chopped Celery Leaved
3 tablespoon Tony Chacheres Original Creole Seasoning
DIRECTIONS:
1: In a large bowl, moisten bread crumbs thoroughly with red wine.
2: Add all other ingredients to bread mixture.
3: Mold into a loaf (kneading with fingers is best).
4: Place in a greased loaf pan and cover with the following sauce.
5: Bake in a 180 degrees over for 1 hour and 15 minutes, basting frequently.
6: Do not allow to dry out.
7: Add beef broth when needed.
8: Remove from oven, turn onto platter and slice.
